Hello, Sunshine!

Okay, don't freak out. Yes, I let the little kids use the food processor. Because there are so many mandatory locking features on it that it's pretty much impossible to grate your finger off or something. They absolutely LOVE grating stuff! It is definitely satisfying, since you can see the food disappear right before your eyes. Magic!

Reese and Amelia's Sunshine Dip

A quick word about 'light' cream cheese: Feel free to substitute it in this dip. Same goes for the sour cream. The flavors are vibrant enough to mask the 'light' taste. I personally don't use them because of the ingredient list. I don't know what most of that stuff is. I buy the regular stuff because there are 4 ingredients listed on the cream cheese and one ingredient in the sour cream. So if you are trying to lose a few pounds, please go ahead and use the light stuff. I won't hold it against you!

Sunshine Dip

1 brick of cream cheese, softened
4 wedges (3oz) of Laughing Cow cheese
1/4 cup sour cream
3 large carrots, peeled
1 clove of garlic, grated or finely chopped
salt and pepper
2 orange bell peppers
2 yellow bell peppers

In a food processor grate the carrots.
Change blades and add the garlic, cream cheese, Laughing Cow and sour cream.
Pulse to combine.
Add salt and pepper to taste.
Cut peppers into sticks, or if serving adults cut into larger wedges.
