This Works For Me (Wednesday!)


I'm a list-maker. I use to have lists all over my house. And if I did something that wasn't on the list I'd write it on just so I could cross it off. Lately, I've been so fuzzy headed that I have to write every tiny thing on the list or it doesn't happen. (I'm blaming Jilly-Bean, she's sucking the brains right out of me!) My lists were getting longer and longer and every time I'd cross something off it seemed 3 more things got tagged on to the end. *sigh* Then I would lose motivation and stuff didn't get done. So this is my new list. It gives me a little more maneuverability while still getting things done. So I don't feel like a complete loser at the end of the day. There are also no shortcuts. I know I'll be cleaning the kitchen (several times) so it's not on the list just so it can be crossed off later. I lose that tiny bit of satisfaction, but even so, this really Works for Me!

Clean something!

Create* something!

De-Clutter something!

Get rid of something!

Make* something!

Organize something!

Post something!

Write something!

*In my world 'create' is crafting and 'make' is cooking/baking.

One more thing that really Works for Me is my chicken marinade. I've posted it before, but as a component of a sandwich. This is really the best ever marinade and it takes all of about 5 minutes (plus grilling time) to put together. Later you just slap it on the grill and dinner is done! Works for Me!!!



For the marinade:
1 onion, coarsely chopped
1 lemon, sliced
3-4 cloves of garlic, smashed
3-4 sprigs of your favorite fresh herb, I usually use thyme or rosemary
1 tablespoon honey
1/2 cup of your favorite vinegar, I use red wine vinegar
1 1/2 cups of olive oil
freshly ground black pepper
6-8 boneless, skinless chicken breasts



Put all the ingredients for the marinade into a large ziplock bag. (I squeeze the lemon slices when I add them in.)
Close the bag and mash everything together.
Let sit in the fridge for at least an hour so the flavors meld. (I've forgotten about it once and left it overnight with no problem at all.)
Preheat your grill or grill pan to medium.
Place chicken on grill and cook about 7 minutes.
Flip and cook another 5, until golden and delicious.

Oh yea, I'll be trying this marinade for sure! Bookmarked! I think I'm caught up now! Just waiting for a DITL. :)
